Risotto with Bacon and Pomegranate
Ingredients for 4 people:
4 cups rice
1 onion
1 pomegranate
Bacon
White Pepper
Grated Parmesan cheese
This is a perfect recipe for Christmas time. It is actually a wonderful recipe for any time of the year when you can find pomegranates. It entails a mixture of flavors and it is not a very well known recipe in Tuscan gastronomy. However, we are sure it will be to everyone’s living.
First separate the grains from the pomegranate and place them in a bowl.
Then chop the onion and fry it in a frying pan with oil and a spoonful of water so that it does not burn. Once the water has evaporated add dices of bacon and fry them lightly. Then add the rice, which has been previously fried with onions and garlic and let it cook on low fire, stirring the mixture constantly so that it does not get stuck to the pan. Pour some white wine and then add the vegetable broth necessary for cooking.
Once the rice is just right and before removing it from the fire add the pomegranate grains, a bit of white pepper and grated Parmesan cheese.
Serve it really hot and... Bon appetite!
