RECIPE OF THE MONTH: LA PANZANELLA
The varied and delicious Tuscan gastronomy also has its refreshing summer dishes which are perfect for these months of intense heat. Among the many options we would like to talk about the “star-dish” of the summer dishes: La Panzanella.
For the simplicity of its ingredients and its easy preparation the dish we are dealing with comes from the so-called “Poor Cuisine”, although its exquisite flavour makes it perfect to suit everyone’s tastes..
Ingredients for 4 people
500 grams of dry bread
3 ripe tomatoes
1 red onion
some basil leaves
extra virgin olive oil
Put the dry bread in the water until it has soaked thoroughly. Then cut it in chunks and put it in a bowl.
Dice the tomatoes, the marrow and the onion and add some basil leaves. Flavour with salt, pepper and vinegar.
Put it in the refrigerator for a while and serve it cold.
Depending on the eaters taste, some people prepare the Panzanella adding a bit of green pepper, hard-boiled egg, tuna and anchovy fillets.
