HOW TO RECOGNIZE A GOOD T-BONE STEAK
First of all, you need to choose a very good piece of meat. In order to do that, you will need to look for fibrosity and fat in it.
A nice T-bone steak usually stands out because it is around 12 cm high and it has some white streaks all over (these streaks should be very thin and there should be lots of them). Remember a piece of meat with little fat tends to be less tasty.
HOW TO PREPARE IT
Once you’ve chosen the piece of meat, you need to know exactly how to cook it.
If you do not have a barbeque at home, you will need to use a nonstick frying pan, which you will grease with two spoons of oil.
The pan requires just a little oil. Once the pan and the meat are ready, you’ll have to put the piece of meat on the pan and cook it over a high flame; and when the oil is very hot, add the piece of meat. The amount of time on the heat will vary according to the meat’s thickness and how you actually want to eat it.
It is very important for the meat to be well done in both sides, something that will avoid the release of all those liquids inside. That is why it is so important not to use the fork when you move it…
Salt is added only at the end of the procedure, right before serving your meat at the table.
